Liver and Onions @ Luby's
The image may not be the greatest, but the taste was spectacular. There are few chain restaurants which are frequented by my family and I, Luby's is our "fast food" joint. Liver and Onions always takes me back to my childhood.
I had Jalapeno Corn Bread, Panko Breaded Fried Zuccini, slighly floured pan fried liver and onions, and a mixed greens salad with red onion, tomato, and a pickle spear.
Not sure what it is about Liver and Onions, most people I know hate it, but for me the earthy briny taste reminds me of my grandmothers kitchen. If I saw that white container in the refrigerator, I knew we'd be having Liver and Onions that day! She would prepare this dish quite often during the summer(liver used to be really cheap), fresh flour tortillas, and always beans and rice. I would rush to the kitchen from assisting Rambo or Chuck Norris on some mission with my brother in tow. We'd sit down as hungry as a hero can get and the bounty was ours, they could keep the hot girl at the end, we wanted Liver and Onions instead. Cartoons soon after a mid-day nap was the recipe for a perfect day! It all started with Liver and Onions for me, everytime I eat it, I'm back at that modest wood frame home eating besides my memories. Luby's gets me when it comes to Liver and Onions, please do not change!
